CREAM SOUP WITH THYME
What do you need:
Pumpkin – 600 g.
Potatoes – 250 g (2 pcs. medium-sized)
Carrots (medium) – 1 pc.,
Onion – 1 pc.
Fresh thyme – 3-4 sprigs (if dry – a few pinches),
Water – 700 ml
Cooking cream 10% – 200 ml.,
Cow butter – 2 tbsp.
Salt to taste.
Croutons, ham – to serve.
How to prepare:
Put the diced pumpkin, potatoes, carrots, and onions in a pot. Pour 700 ml of water. Let it boil, add salt, put thyme sprigs, cook until the vegetables are ready.
Pour the cooked vegetables with broth into a blender (at the same time, do not forget to remove and discard the thyme stalks), puree until smooth.
Pour the puree into a saucepan, add the cream, put the butter, mix. If you want to your taste, add salt and a little more fresh thyme. Bring to a gentle boil, stirring constantly. Remove the soup from the heat, serve with croutons and ham.
While the soup is cooking, prepare croutons: cut the bread into cubes, put in a pan on baking paper, add salt, sprinkle with olive oil, bake at 180 g – 10 minutes.
