Autumn is here with many flavors, colors and aromas! This month Ruskovets Thermal Spa Resort 4* offers you several delicious delights:

CREAM SOUP WITH THYME

 What do you need:

Pumpkin – 600 g.

Potatoes – 250 g (2 pcs. medium-sized)

Carrots (medium) – 1 pc.,

Onion – 1 pc.

Fresh thyme – 3-4 sprigs (if dry – a few pinches),

Water – 700 ml

Cooking cream 10% – 200 ml.,

Cow butter – 2 tbsp.

Salt to taste.

Croutons, ham – to serve.

How to prepare:

Put the diced pumpkin, potatoes, carrots, and onions in a pot. Pour 700 ml of water. Let it boil, add salt, put thyme sprigs, cook until the vegetables are ready.

Pour the cooked vegetables with broth into a blender (at the same time, do not forget to remove and discard the thyme stalks), puree until smooth.

Pour the puree into a saucepan, add the cream, put the butter, mix. If you want to your taste, add salt and a little more fresh thyme. Bring to a gentle boil, stirring constantly. Remove the soup from the heat, serve with croutons and ham.

While the soup is cooking, prepare croutons: cut the bread into cubes, put in a pan on baking paper, add salt, sprinkle with olive oil, bake at 180 g – 10 minutes.

Pumpkin cream soup with apple and curry


INGREDIENTS:
 pumpkin – 500 g
potatoes – 1 pc.
garlic – 2 cloves
onion – 1 pc
apples – 1 pc.
thyme – 2 sprigs
curry – 1/2 tsp.
water – 600 ml.
olive oil – 1 tablespoon
salt
pepper

PREPARATION STEPS:

A great, light and colorful soup. Quickly prepare a healthy and delicious soup to eat. Thanks to apples, even children enjoy eating it.
Finely chop the onion and garlic. Peel the potatoes and cut them into cubes.
Pour olive oil into a saucepan with a thick bottom and fry the onion.
Add the potatoes, garlic and squash. Fry everything for 5 minutes on high heat, add the thyme, finally pour water, add salt and pepper, bring to a boil and cook for 10-15 minutes until the potatoes and pumpkins are ready.
 While the soup is boiling, peel the apples and cut them into cubes. Fry separately in a pan with a little oil, sprinkle with curry, salt and pepper.
The soup is removed from the heat, pureed with a blender and returned to the heat for 2-3 minutes.
Pour into plates, add apples and garnish with thyme. Enjoy your meal !!!
